Civil War corn.

Corn must be like peanuts, different areas, different varieties and different uses. Alabama is one of the country's largest peanut producers, but most of the peanuts grown here are used for peanut butter and other commercial uses. The peanuts that you get around here in Alabama to eat are often grown in Virginia-go figure.
 
I believe Indian corn is a type of flint corn. This would make some sense as farmers would need corn that once ripe was hard enough to store and hard enough to ship.
