"All men are created equal"

I think its obvious that there is limitations to the understanding all men are created equal. It can't possible mean all people are created equal in every manner. It can't possible indicate that that everyone is equally suitable for leadership or servitude. It can't possible mean that every one is equally tall or short, or skinny or fat, or smart, or dumb etc etc. It can't possible indicate that the person born with disabilities, like physical deformities and mental deficiencies have the same potential capacity to think or run or lift or do. What then do they mean by all men are created equal. Should we assume that by putting down the words all men are created equal that drafters intended to strip the existing social order bare? Should we ignore the actions of the people who drafted the document; or rather should we temper how we understand their words with reality as we know it in combination with the actions they took?
