Now Florida but always a Kentuckian
During the Civil War many Southern ladies gathered sour oranges to make lemonade for the soldiers. This drink makes a thirst quenching drink.

1 cup sour orange juice
1/4 cup cane syrup or brown sugar to taste
2 cups water
3 ice cubes

Shake orange juice, syrup and water in quart jar with lid. Add ice cubes and shake again.

Serves 2

The sour orange fruit is quite tart like a lemon. It does have a distinctive flavor. This orange makes a good tart, marmalade and a good whiskey sour. It also can be added to ice tea or used to marinate or accent fish.

A delicious pie is Wild Orange Pie. Maybe some of you will make for the Holidays. It is a great dessert for this time of year. It is said the wild orange pie is North Florida's answer to South Florida's key lime pie.

2/3 cup juice from wild oranges
1 tablespoon unflavored gelatin
1/2 cup hot water
1/2 cup orange blossom honey
1 cup cottage cheese (low fat)
9 inch graham cracker pie crust

Mix wild orange juice and gelatin in blender. Allow to stand a few minutes. Dissolve honey in hot water and add to juice. Blend until gelatin is dissolved. Add cottage cheese and blend until smooth and creamy.

Pour into crust and refrigerate until firm.

Serves 6 to 8.
