What is Burgoo?

Servings: 10
  • 1 1/2 lbs boneless skinless chicken breasts
  • 1 1/2 lbs boneless beef shank (stew beef)
  • 1 lb lamb stew meat
  • 6 cups water
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 cups shredded cabbage (about 1/2 pound)
  • 3 medium potatoes, peeled and cut into 1/2-inch cubes (about 3 cups)
  • 1 (28 ounce) can whole tomatoes, drained and chopped
  • 5 medium carrots, peeled and diced (about 2 cups)
  • 2 cups fresh okra (or, 1 10-ounce package of frozen okra)
  • 1 1/2 cups frozen corn kernels (about 3 ears, if using fresh)
  • 1 medium onion, chopped (about 1 1/4 cups)
  • 1 large green bell pepper, diced (about 1 1/2 cups)
  • 2 garlic cloves, minced
  • 1 1/2 teaspoons dried sage
  • 1 1/2 teaspoons dried thyme
  • 1 bay leaf
  • 5 drops hot pepper sauce (preferably like Frank's)
  • 1/8 teaspoon cayenne pepper (ground red pepper)
  • 1/2 lb cooked ham, cut into bite-size pieces
  • 1 cup chopped fresh flat-leaf parsley (Italian parsley)
Directions
  1. In a large Dutch oven, combine the chicken, beef, lamb, water, salt, and black pepper. Bring to a boil over high heat, skimming any foam that rises to the surface. Reduce the heat to medium-low and simmer, partially covered, until the chicken, 30 to 35 minutes.
  2. Remove the chicken to a plate and cover loosely with foil. Continue to simmer the other meats, partially covered, until they are tender, about 1 1/2 hours longer. Add the meats to the plate of chicken and keep covered.
  3. Add the cabbage, potatoes, tomatoes, carrots, okra, corn, onions, bell pepper, garlic, sage, thyme, bay leaf, hot pepper sauce, and cayenne to the stock. Increase the heat to high and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, for 30 minutes.
  4. Cut the chicken, beef, and lamb into bite size pieces and add them and the ham to the Dutch oven. Continue simmering until the meat is heated through, about 10 minutes.
  5. Discard the bay leaf. Stir in the parsley and serve hot.
This is the burgoo that my wife makes and it's sure good.

Kentucky Burgoo
Serves 15-20

Ingredients
2-3 lb. chicken leg quarters
1 quart chicken broth
3-4 lb. chuck roast, cut into chunks
3-4 lb. pork shoulder, cut into chunks
1 cup dried Great Northern beans, soaked for at least 1 hour
2 large russet potatoes, peeled and diced
1 cup diced onion (about 1 onion)
1 cup diced carrot (about 3 carrots)
½ cup diced celery (about 3 stalks)
1 cup diced turnip (about 1 turnip)
1 cup cut green beans, fresh or canned
1 cup frozen peas
1 cup corn, fresh or frozen
1 14.5-oz. can diced tomatoes
2 cups V8
½ cup A.1. Steak Sauce
¼-½ cup Frank's RedHot, and more to taste
½ cup Worcestershire sauce
Salt and pepper, to taste
 
Sounds sorta like booya:

Booyah (also spelled booya, bouja, boulyaw, or bouyou) is a thick soup of probable Belgian origin made throughout the Upper Midwestern United States.[1] Booyah often requires up to two days and multiple cooks to prepare; it is cooked in specially designed "booyah kettles" and usually meant to serve hundreds or even thousands of people.[citation needed] The name also refers to the event surrounding the meal.

Cooking[edit]
In cooking booyah, one makes a base or broth derived from meat bones, to which vegetables are added. Beef, chicken, and pork are popular varieties of meat for booyah (with all three often in the same kettle), with vegetables such as carrots, peas, onion, and potatoes also in the mix. A wide variety of seasonings are used, sometimes lowered into the kettle in a cheesecloth bag.[2]

Typical large-scale "booyah kettles" can hold more than 50 US gallons (190 L) of the stew, and are made from steel to withstand direct heat.[citation needed] Some community groups and churches have their own kettles, generally custom-made for charity events, while other groups rely on municipal kettles.[citation needed]
 
My grandmother relates a Burgoo story. At a family reunion, the burgoo was cooked in a large iron kettle or cauldron suspended inside a free-standing fireplace outside in the orchard.
After the festivities, during cleanup, the cauldron was dumped out on the ground and a blacksnake flowed out of it and slithered off into the corn field.
 
Even though Derby day has come and past, a burgoo has to have two ingredients, mutton and butter beans (goat and lima beans), the rest can be any Mulligan stew recipe that meets your fancy, this is a must handed down from a 4th generation Hardboot, if that moniker doesn't ring a bell, well then you may want to head to Mickey Dee's for supper. :D
