I have seen this photo before and believe you are correct; if I remember right, it was taken after their exchange to memorialize their experience before they got "cleaned up". There's also another one of an individual officer who was the creator of a printed and illustrated "newspaper" which he smuggled out.
 
James, don't know whether you have seen it or not, but I have a canteen carried by a soldier in the 75th NY that was on the Clifton at Sabine Pass as a "sharpshooter" on the Clifton and captured. He went first to Groce at Hempstead, then to Camp Ford for a total of about 10 months. His name was Follet. He was exchanged in La and went home. The canteen has a wooden stopper most likely made from wood while in the Camp Ford stockade.
