Uniforms U.S. Army Trousers

The addition of the separate yoke (or "side pieces") at the top of the back is a cloth saving measure. Here is a tailor's diagram, or "lay down," from the 1820s showing how it saves fabric to add them on:

The strangely square-shaped yokes are no different. Here is another pre-war tailor's lay-down showing how pieces for multiple pants are cut out, and why some have them;
