Recently discovered this old cook book on line. It is called "Aunt Caroline's Dixieland Recipes" by Emma and William McKinney. It was published in 1922 and is collection of old southern recipes from cooks of early times.
One recipe is U.D.C. cocoanut candy.
two cups of white sugar
one half cup of milk
one cup of grated cocoanut
one teaspoonful of vanilla
butter the size of an egg
Put sugar, milk and butter on to cook. Let it cook until it will form a soft ball when tried in cold water. Add vanilla, remove from the stove, and beat in the cocoanut until it becomes creamy. Pour into buttered plate and cut into squares when cold.
Note: That is the way they spell coconut. So not an error on my part.
