There was a question as to invention of chicken salad. The Chinese were the first to serve a variation of Chicken Salad. These versions were far from what we know today as chicken salad. They mixed chicken with a variety of spices and oils.

In 1863 in U.S. history the first version of chicken salad was served by Town Meats of Wakefield, R.I. The founder, Liam Gray, mixed his leftover chicken with mayonnaise, tarragon and grapes. The result was a delicious chicken salad. It was so popular Town Meats became a delicatessen. The business was still operating until about 10 years ago, but the recipe stayed around and many have their version.
