The Term Authentic

I have had question on the use of the term authentic as to the recipes posted. I have tried to state where they come from but realize that many have been recreated to our times. This is shown by use of measurements that came after Civil War era and by certain ingredients used.

I will try to go through each of recipes that I posted as authentic and clarify more why they are. As to those posted by others, I will leave as they are as I don't know how the person decided what was authentic and not.

Many family recipes have been posted. They do go back to the appropriate time or before, but have been recreated over the years by each generation of cooks. Thus, I guess in being totally accurate they should always be termed recreated or historical.

Thanks for your understanding on this. It will take me some time to go through each recipe.

I am working on each recipe termed authentic. It does take time. But hope to clarify things in time.

There may still be debate on whether authentic or not. If I state they are, this just my opinion. If doubt by any please only use them at Civil War events, if you feel they will qualify. I will still post them and include as much information on them as possible.

When reviewing your authentic posts, most had dates that were fine and had reference to a publication of the time. You used History and Period for many.

I would state that authentic can be from any cookbook up to 1866 and some just past that time. Some may have been edited and modern measurements added later.

If measurements are modern and you are preparing for a Civil War event that says it must be authentic to the time, you need to check the Heirloom measurement thread. I will bring it up so people can check it again.
