With St. Patrick's Day on the horizon this variation of the Irish/Irish-American favourite Corned beef came to mind. Its very popular around Christmas time but these days it available in stores all year round. Its very similar to corned beef but has a strong spice rub crust on the outside. The spices in the rub include All spice, cloves, black Pepper, white Pepper, nutmeg, dried ginger, cinnamon. The last time I tried it I remember the All Spice being a predominant flavour. The dish is a particular favourite in the south of Ireland in County Cork and can be purchased from artisan producers in Cork City's famous English Market.
