Simple Pork Pie

Pork Pie

Make a common pie crust, put it in a pan, take pork, and cut it into small pieces and beat them a little; season with pepper and salt. Fill your pie, put on the top crust, bake two hours with paper over it to prevent it from burning. There should be some gravy in it when done.

Here's a recipe for pork pies from Paul Hollywood, who's a judge on the Great British Baking Show -

Ingredients -

For the hot water crust pastry -
  • 265g plain flour, plus extra for dusting
  • 55g strong white bread flour
  • 55g unsalted butter, cubed
  • 65g lard
  • 1 tsp salt
  • 135ml boiling water
  • 1 egg, lightly beaten for glazing
For the filling -
  • 1 large onion, peeled and finely chopped
  • 380g pork loin, finely chopped
  • 100g unsmoked back bacon, finely chopped
  • Small bunch of parsley, leaves only, chopped
  • Sea salt and freshly ground black pepper
  • 1 large or 2 small sheets of leaf gelatine
  • ½ chicken stock cube
  • 300ml boiling water

I know Paul always recommends a hot water crust for meat pies as they hold up the best because meats tend to be juicy and you don't want a soggy bottom or leaking pies! Apologies for the UK measurements, you can easily convert amounts online.
 
This pie sounds very simple in it's original form. I can believe that the people making had nothing else to add to it. Even the other recipe doesn't call for much in the way of veggies. I think a variation on the recipe would have to be done, as I like my vegetables. Even given a modification, the second recipe still sounds very tasty. Thanks for posting.
 
Paul H's recipe does make a great pork pie.
No need to apologise for the EU measurements, us Brits use proper pounds and ounces not those fiddly gram things.
Or maybe that is just me showing my age.

I'm used to 1 cup or 1/4 cup kind of measurements. I'm always confused by actually weighing ingredients unless it's meat or veggies! After watching the British Bake Show for a few years now, I've adapted to seeing a scale and weighing out ingredients. Haven't tried it myself but I'm considering it as I have a couple of British Bake Show cookbooks I keep converting measurements on!

I'm with you, I'd like some vegetables with my pie, too! Even if it's just some carrots and peas!
