September is chicken month. Hope some of you can post their favorite old recipe for chicken. I always love fried chicken. This is my Great Aunt's recipe. It is simple but turns out great.

Cut a young chicken into small pieces. Salt well and let stand for a few hours. Wash and drain and dip each piece of chicken into beaten egg, and roll the chicken pieces into flour. Make sure salt and pepper been added to flour. Fry pieces in hot oil to a golden brown.
