Today, June 3 is National Egg Day. Thought add this old recipe. It is from "Old Time Recipes To Enjoy, Kentucky Explorer, June 2019". In place of Crisco could use lard or butter.
Crisco, six eggs, two tablespoons of chopped parsley, four tablespoons of chopped cooked chicken, ham or tongue, six rounds of fried toast. Coat six small moulds with Crisco, then mix ham, parsley, and seasonings together. Throw a little into each mould, shake well on the sides, then break an egg into each mould, taking care not to break the yolk. Sprinkle with salt and pepper, dot with Crisco. Steam four or five minutes, or until set. Turn out on rounds of fried toast and serve at once.
