Ingredients:

3 eggs
2 ounces of fresh butter, or well-washed salt butter
1 teaspoonful of cream, or new milk

Serve on buttered toast

Instructions:

Very convenient for invalids, or, when required, a light dish for supper. Beat up three eggs with two ounces of fresh butter, or well-washed salt butter; add a teaspoonful of cream or new milk. Put all in a saucepan and keep stirring it over the fire for five minutes, until it rises up like a souffle, when it should be immediately dished on buttered toast.

I put in generous amounts of tabasco! (But I do that with everything except vanilla ice cream....) I'm going to try this - never thought about beating butter into the eggs. But that would make it rise up!

Not yet, but it's given me a hankering for some scrambled egg. I like to add bacon bits, or chopped bacon slices. Garnished with paprika and chopped onion (raw).
Anyone else got additions to plain scrambled/rumbled eggs?

Now I hankering also for some scrambled eggs for dinner tonight! I get my eggs farm-raised from a friend. I like to add bacon also and some shredded cheese...ya get differing tastes depending on the kinda cheese you using...like no kidding...duh. Sometimes I add some chopped jalapenia peppers and a dash or 2 of hot sauce. This will insure a good "movement" next morning!:skip:

The name caught my attention--and I love recipes with eggs. Just tried it and I must say it is very, very good. Somehow it is a bit different from scrambled eggs. All that butter and little bit of cream definitely adds something. Thank you for the recipe.
