Now Florida but always a Kentuckian
Fall is approaching. I have already seen pumpkins in the fields almost ready to pick.

Here is old recipe for Pumpkin Chunks. My Granny made these.

Pumpkin Chunks

Select a firm pumpkin, slice and cut away rind and soft inside. Cut into one-inch squares. Weigh, and add one lemon sliced very thin and 3/4 lb sugar for each pound of chunks. Let stand until syrup is formed. Cook in preserving kettle until chunks are clear. Remove pumpkin and continue to boil syrup until almost jellied. Replace chunks and boil 10 minutes longer. Pour into jars and seal.

Never heard of these before, but, they sound wonderful! I'll have to give them a try. I love pumpkin - pumpkin pie, pumpkin cheesecake, pumpkin bread, pumpkin ice cream ...
