Potato Pancake

In December 2012 donna did a thread on Hanukkah and it mentioned latkes.

Potato pancakes go back centuries and many countries have their own version of them. A recent thread was started on noodle pudding and I thought we needed something on potato pancakes.

Donna's Potato Pancakes:

3 medium sized potatoes
1 tablespoon flour
grated onion or onion salt
1 tablespoon cream
1 egg, beaten light
1 teaspoon salt

Grate potatoes. Add other ingredients and stir well. Cook by spoonfuls in shallow hot fat, turning once. Serve with meats, applesauce, or cranberry sauce. Serves 4.
