When saw post about Poor Man's Pudding, thought of Poor Man's Soup. My Grandma had this recipe during the Depression. My Uncle gave it to us. He remembers when he was a young boy,( during the Depression Years), that she made this a lot. It is very nourishing.

Poor Man's Soup

1 soup bone
1 cup dry pea beans
2 cups tomatoes (1 quart)
1 cup chopped celery
1 cup diced potatoes
1/2 cup raw rice
1/3 lb ground beef
1/3 cup chopped onion
salt and pepper
1/8 teaspoon basil

Pick over beans and soak overnight. Simmer soup bone in 8 quarts water for several hours. Add beans and simmer 45 minutes. Meanwhile, fry beef and onion. Add to soup along with remaining ingredients and simmer for one hour.
 
I love celery and always put it in various stews and soups even if the recipe doesn't necessarily all for it. It's just not a handy dipping vegetable. There's an excellent blog post here about how useful even the celery leaves are for cooking and are often overlooked. Don't just throw the tops out anymore people!

Very nice I was just explaining to my son the use of bones in suit the other night thanks for the recipe.
