Picnic Menu from Mrs. Beeton

Today, June 18 is International Picnic Day. Picnics were popular in Civil War era. Mrs. Beeton in her "Book of Household Management" has menu for the idea picnic for 20 persons.

For the ideal picnic, according to Mrs. Beeton, one should have:

5 lbs cold salmon
mayonnaise sauce
1 quarter lamb
mint sauce
1 large galantine of veal
3 boiled chickens
1 ham
2 pigeon pies
salad with dressing
2 cucumbers
2 fruit tarts
pastry sandwiches
2 jellies and 2 creams
custard
1 gallon of strawberries
3 lbs of grapes
1 lb of cheese
1/2 lb of butter
4loaves of bread or rolls

This picnic sounds grand and quite an affair.

That's some movable feast! I think you need servants in order to heft that much food to a picnic site. Regardless, I've always been a fan of Mrs. Beeton. Her book on Household Management really was one of the only go-to books of it's kind in the era. She spent a great deal of time and effort testing almost all of her recipes and crafting them to fit the needs of middle class women.

Well...I'm fairly bummed it's not picnic day. I do love a picnic. Irregardless, no picnic would be complete without some lemonade.

Rose Lemonade

Ingredients

• 1 1/2 cups fresh lemon juice, chilled
• 1 1/2 cups Rose Simple Syrup (recipe follows)
• 1 1/2 cups water or sparkling water, chilled

Rose Simple Syrup

• 3 cups water
• 1 1/2 cups sugar
• 2 tablespoons lemon zest
• Petals from 1 edible rose

The Victorian did nothing in halves, that's for sure! I got my shipment of books from the UK today from a dear friend. And one of the titles which is currently not available in the US is "The Greedy Queen - Eating with Victoria" I'm really looking forward to it as the book discusses Victoria and her relationship with food and how her tastes influenced the nation. I'm sure to learn lots about Victorian cooking and food, so I'll be sure to share my knowledge here!
