Pickled green tomatoes

The Wolf river cafe in Rossville serves the best tomato pickle relish with its catfish. I don't know if they start with yellow tomatoes or if something about the process makes them yellow, but it's yellow.
 
Found old recipe for Pickled Green Tomatoes:

One peck of green tomatoes, sliced very thin; sprinkle with salt; rest 24 hours; drain, then take six onions, cut in the same way, and at the same time; mix together one-fourth pound of white mustard seed, one ounce of ground pepper, one ounce of cloves, one ounce of ground ginger, one ounce ground mustard; put a layer of tomatoes and one of spices alternatively in a preserving kettle; add one half pound of moist sugar; cover with vinegar; boil gently until transparent; when cold it id ready for use.
