Pecans

yep Allie just across the river...sounding the same. we call it over here laid back lips. just get the word out. Those E's and an's take to much time. I may have to make a pecan pie this weekend after all this talk.
 
We say it closest to p'khan but the first sound is a tad longer... maybe pih-khan. It's pray-leen pih-khan ice cream.

We don't eat pecans too often in my neck of the woods- so doesn't matter how we say it. :) I'm not a huge fan of pecan pie- too sweet for me. I do really like roasted pecans, however!
 
In the 60s, my great aunt and uncle used to buy maple syrup from a couple in New England. One year they sent them pecans as a gift. They got a note back that said, "We found that they're really good to eat, but how do you get the things out of the shell? We started in on them as we would a walnut and kept smashing them all to pieces."

Goldy Bear's Lethal Layers


Another recipe from Diane Mott Davidson's Goldy Bear character. Like pecan pie, only easier to pick up. Yum!!

Servings 36 squares
Directions
  1. Preheat oven to 375.
  2. In a food processor, combine the first three ingredients with a metal blade until coarse crumbs are formed. (can also be done with 2 knives or a pastry cutter).
  3. Pat as a crust into a buttered 9x13 pan.
  4. Bake for 10 minutes.
  5. Spread pecans over crust.
  6. Beat eggs with brown sugar until thick.
  7. Add vanilla.
  8. Put salt and baking power in the bottom of a 1/4 cup measure, then fill the rest of the measure with flour.
  9. Stir this into egg mixture.
  10. Pour this mixture over the pecans and crust.
  11. Sprinkle chips over the mixture.
  12. Bake at 375 for 20 minutes or until center is set.
  13. Let cool before cutting.
I double the crust ingredients, because I found it did not cover the bottom of the pan. I also add more pecans and chocolate chips, because I can!

I have never seen those before.since I love pecan pie I think I'll have the boss make these.

I had two big ol paper shell pecan trees in my front yard that were lousy with the best tastin pecans ever. I had so many that we would bag em up and give em to the neighbors til they had so many they quit takin em from us. Sittin on the front porch crackin those pecans and eatin em........those were the days.
