Paul Prudhomme

I had no idea he was so poorly, but then, I haven't watched a "cooking" show for ages. When I was watching them, he was a favorite.

Goodbye, Paul. You will be missed.
 
Paul helped put New Orleans on the map as a food mecca .

He was the first non European Chef at the world renowned Commanders Palace in the New Orleans Garden District .

Blackened Red Fish was his invention . Before Paul Redfish was never served in an upscale white table cloth establishment .It was considered a " trash fish " by many . After Paul introduced it the species almost went extinct !

The son of a share cropper no one did more for the Food and Culture of Southern Louisiana than Chef Paul . R.I.P.

New Orleans is my favorite city on the planet for a variety of reasons...FOOD being one of them .

I'm be there in 17 days and spend a week with a crew of Halloween enthusiasts . Managing my stomach space is going to be a priority . BTW : I won't be eating blackened anything .

My New Orleans raised husband has never eaten blackened redfish. He did grow up eating redfish courtboullion long before anyone heard of Paul Prudhomme.
