I'm reading a lot of bios of soldiers on both sides, being captured and paroled, and then rejoining their cause. Is there data out there to show roughly how many people returned to serve again?

There's too many to look at, so I'd suggest looking specifically at Vicksburg, as that was the largest capture/parole event for Confederate soldiers. The people in that forum could help you, as well.
