What are the differences between straight and "gull wing" chevrons? I only know of the USMC and CSMC using gull wing chevrons, but some say that gull wings were used in the army aswell.

No difference. Just a matter of taste.

The Army Regulations at the beginning of the war describe the chevrons...

Conformity varied...

From the 1847-57 Regulations, when the chevrons were adopted generally (for fatigue dress), the illustration showed them straight barred...

US Marine Corps Regulations of 1859 also illustrated straight chevrons.

The photos of the day leave a lot to be desired with relation to color. For many red could merge with blue and yellow could appear - or not. Here is an attempt to colorize a good photo, mainly sharp and detailed , of a USMC guard at Washington Navy Yard. This is the final version which needed a LOT of revision. Original first:

I am not sure what rank the NCO was but the size of the chevrons did not look big enough for a sergeant - that and the frog-mounted sheath for the NCO sword.
