Matzo is an unleavened flatbread that is part of Jewish cuisine for Passover. For it to be Kosher for Passover, it must be plain matzo made from flour and water in the Ashkenazi tradition. The flour must be whole grain but must be wheat, spelt, barley or oat. The Sephardic tradition allows eggs to be used.
