December 26th starts Kwanzaa. Here is a recipe that combines African and American flavors, a perfect Kwanzaa combination.
Peanut Butter Soup
Peanuts called ground nuts are a staple of many African tribes.
2 tablespoons oil
4 boneless, skinless chicken breasts, cut into bite-sized pieces
1 diced onion
1 jalapeno, minced
2 cups water
2 tablespoons peanut butter
1 large tomato, chopped
Over medium to high heat, heat the oil in a large saucepan and add the chicken, turning until lightly browned. Remove from pan. Add the onions and jalapeno and saute until limp.
In a small bowl, combine 1/2 cup water with the peanut butter until smooth. Add to pan along with remaining water, chicken and tomato. Bring to a boil, then lower heat and simmer 15 minutes.
Serves 4.
