Johnny Cakes have been called hoe cakes,"journey cakes", Shawnee Cakes to the Indian version jaiken. They are a corn cake. General Washington served them too.

Recipe from "American Cookery", by Amelia Simmons, 1796
Johny Cake, or Hoe Cake
"Scald 1 pint of milk and put to 3 pints of Indian meal, and half pint of flower. bake before the fire. Or fcald with milk two thirds of the indian meal, or wet two thirds with boiling water, add falt, molaffes and fhortening, work up with cold water pretty fliff, and bake as above."
 
Another recipe for Johnny Cakes. This based on Confederate Johnny Cakes recipe.

2 cups cornmeal
2/3 cup water (can substitute milk)
2 tablespoons bacon grease
2 teaspoons baking soda
1/2 teaspoon salt

Mix all ingredients. Spoon into hot oil in frying pan. Remove dodgers and serve hot with butter.
