The St. James Hotel of Cimmaron, New Mexico closed last month. I just found out and didn't get a chance to dine there one last time.
Anyway, the founder was Henry Lambert (shouldn't it be Henri?) started the legend that he was Grant's personal chef and that Grant had recommended him to Lincoln who then accepted Lambert as a chef at the White House.
Of course that's all tall tales since Grant would not have corresponded with Lincoln (chain of command) when he was just a nobody (until after Vicksburg and Chattanooga) and there is no reference to Lambert in the papers of Abraham Lincoln. I never told the staff at the St. James that but the hotel was famous in the cowboy days for hosting many famous cowboys (both villians and lawmen - see wiki link below). There were bullet holes in the ceiling of the bar from the cowboys shooting their guns there and the double wood floor stopped anyone bullets from killing any guests upstairs. The hotel is supposed to be haunted by the ghost of one cowboy who won the hotel at a poker game there and was then shot in the back by the sore loser. There was one room they never allowed a guest to stay in.
