Interesting! About a year ago I did some research on vegetarianism in the CW era and found that, indeed, there were folks advocating healthful diets (such as Mr. Graham of the graham cracker, and the founders of the Seventh-Day Adventist Church). Back in the day, graham crackers were unsweetened (today they are essentially a very sweet cookie), so with modern graham crackers, little or no sugar will be needed in this recipe.

Missed this yesterday,it is indeed interesting.Found this interesting recipe in American Cookery (1917). Never heard of it before, seems the graham crackers are being used as a substitute for flour in this recipe. I'm curious how moist a cake like this would be. Has anyone had one similar?

Oddly enough while reading the Greedy Queen a food history of Queen Victoria's life, I learned that as a young girl she was given a very bland diet in the belief that too much flavor and rich food in a young girl would lead to inappropriate behavior including lust. However, boys could eat whatever they wished. Figures
