Thought would add another ham recipe. This one from meals and recipes from Conner Prairie in Indiana. This one served for Easter dinner.

Glazed Ham

10 to 12 pound country ham
1 cup honey
1 cup rum or cider
whole cloves
peppercorns
ground ginger
sage

Soak ham overnight in clear water and dry. Make cuts across and along the top of the ham and place the ham on a rack in a large baking pan, so the ham does not touch the bottom of the pan. Dress the scored ham by sticking cloves and peppercorns into the squares, drenching it with a mixture of honey and rum or cider and dusting it with ginger and rubbed sage. Bake in 375 degree oven. Baste liberally every 10 minutes over a period of 1 3/4 hours.

We will have Ham, pierogi, asperagus, a green salad and likely a relish tray, heavy on the black olives! Lamb shaped spice cake for dessert.

My brother-in-law is making smoked brisket. My wife all the sides: corn casserole, Mac n cheese, creamed spinach, and 3 other dishes I just can't seem to remember.

Then coconut cream pie, peanut butter cake, and various Lebanese desserts. Looking forward to celebrating this most important of days.

I don't usually go for collard greens, but that sounds amazing. Will have to tell my wife about this. Bacon mac n cheese...
