For the last day of February, we have Chocolate Soufflé Day. The soufflé was first made in 1783 by French chef, Antoine Beauvilliers. It was not chocolate but was candied lemon and veal kidney.
The first chocolate soufflé recipe was published in Louis Ude's "The French Cook in 1813.
