Why the care in describing the offenders' good physical condition?

Maybe to show they were "well treated" and not indigent or starving?
I'm also impressed that the slaves were given legal counsel.

John I have heard that ultra rich supremacist of any race admire their owning of people and like to brag about their "fine bodies" and such. This seems directed at blacks especially with many of them having noticeable strong physical traits.

If somebody had imprisoned a bunch of my clan they would have had us back in the woods, hewing, so that no one could see our skinny little, crooked legged, pointy headed bodies.

That old newspaper clipping would have been a lot different. Fat? Genetically impossible. Sleek? Never seen one of us yet!
