Love old cookbooks and found this one on Google Books today - How to Cook Potatoes, Apples, Eggs and Fish Four Hundred Ways. The title made me wonder if it was the first vegetarian cookbook given the main ingredients. It was published in 1869 which is a bit after the Civil War, but I figured many of these recipes were no doubt around a few years previously. The egg sandwich one caught my eye. Never thought of putting nutmeg on eggs before.
