I'd like to speak with my Great-Great-Great-Grandfather, who left his pregnant wife, and young daughter to go fight. I'd like to know why he went to fight.

A more historical person I'd like to meet is JEB Stuart. I've always fancied him. Man in uniform, on a horse...

I would LOVE to have a pious conversation with Stonewall Jackson and Robert E. Lee.
I would love to have a conversation with US Grant and ol' Pete Longstreet at the same time! Actually, I'd just like to sit and listen to them both just talk.
Otherwise, I'd love to talk to my g-g-grandfather, James Marlin. My Great Granduncle John told me that all he ever talked about was being a soldier.
 
Only one dinner? Then - William Rose, a faithful slave of Maxcy Gregg. General Gregg was rather reserved and modest, so probably wouldn't feel like having conversation with me... Maybe Rose would tell me more about the general.
