I didn't do the whole Turkey & Ham Christmas dinner this year due to reduced numbers with covid etc. I cooked up a Rib of beef (prime rib) for the folks. It was a lovely bit of meat 40 day dry aged grass fed (it's Christmas !). Of course I cooked too much and had leftovers. I looked up a few ideas how to use them and this Victorian sandwich looked good.
