This is the way my Granny prepared pork chops. I just added garlic powder and onion flakes.
Country Pork Chops
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
4 thin cut bone in pork chops
1 cup flour
2 to 3 teaspoons dried onion flakes
lard or vegetable oil
Gravy
1/2 teaspoon seasoning salt
1/2 to 1 teaspoon pepper
1 cup milk
Combine salt, pepper and garlic powder and sprinkle on both sides of the pork chops. Combine flour and onion flakes on a plate. Coat pork chops on both sides with flour. Heat 2 tablespoons of lard or vegetable oil n a heavy skillet over medium high heat. Cook pork chops on both sides, about 7 minutes each. Remove and keep warm.
To make gravy: add 2 tablespoons of the flour to the pan along with salt and pepper. Stir to blend, then add milk to the flour, a little at a time, stirring constantly. Bring to a boil and serve over the pork chops.
