Cornmeal Mush
You will need:
2 qts. Water 2 ½ cups yellow cornmeal
½ cup bleached flour pinch of salt
1. Bring water to a low boil in the top of a double boiler. Keep it at a steady heat.
2. Sift the cornmeal, flour and salt. Stir in the boiling water. Mix thoroughly.
3. Place over hot water and cook, completely covered, for about 3 hours.
4. Pour into a well-greased loaf pan and let cool at room temperature.
5. Refrigerate.
6. When the mush is cold and somewhat solid, slice and fry on a hot griddle until crusty and golden brown on both sides.
7. Serve with syrup, butter or jam.
