According to Patricia Mitchell, by the summer of 1864 in the Confederacy, the cost of food was making it hard for many people to eat enough protein. One of the solutions was to substitute less costly protein. This book has a recipe for Artificial Oysters.

Not sure if eggs, flour, and corn would make good Artificial Oysters. I guess I would have to be convinced to try Artificial Oysters.
