Cold Fish with Cream Sauce - Cover two pounds of fish with cold water and let soak tow hours; drain and dry; pick to pieces; cover with lukewarm water and set on the back of the stove where it will heat for one hour; drain and press free of water. Put in a teaspoonful of butter in a frying pan; let melt and mix in two tablespoons of flour, stir, and pour in a pint of milk; let boil; add the fish; season with salt and pepper; take form the fire; beat in the yolk of one egg, and serve with plain boiled potatoes.
