This thread is for Farawayfriend who loves American Cobblers.

Cobblers are an American deep-dish fruit dessert or pie with a thick crust (usually a biscuit crust) and a fruit filling (such as apples, peaches or berries). Some are enclosed in the crust while others have a drop-biscuit or crumb topping.

This is a recipe for a delicious cobbler with peaches and cranberries.

Harvest Peach-Berry Cobbler

2/3 cup butter, melted
15.6 oz. pkg. cranberry quick bread and muffin mix
2 29 oz. cans sliced peaches, drained and 1 cup syrup, reserved
1 egg beaten
2 Tablespoons orange zest, divided
1/2 to 2/3 cup sweetened dried cranberries
1/3 cup sugar
1 tablespoon cinnamon
Garnish: whipped cream or vanilla ice cream

Spread melted butter in a 13 x 9 inch baking pan; set aside. In a large bowl, combine dry bread mix, reserved peach syrup, eggs and one tablespoon orange zest. Stir until moistened. Drop batter by heaping spoonfuls over melted butter; spread slightly without stirring. Arrange peaches over batter; sprinkle with cranberries. In a small bowl, combine sugar, remaining zest and cinnamon; mix well and sprinkle over fruit. Bake at 375 degrees for 50 to 60 minutes, until edges are deeply golden. Cool slightly; dollop individual servings with whipped cream or ice cream. Serves 12.

Blueberry Cobbler

Like most people in this area, I have a freezer well stocked with frozen blueberries. This easy recipe is good with either frozen or fresh.

3 cups blueberries
1 tablespoon lemon juice
1 cup all-purpose flour
1 cup white sugar
1 egg, beaten
6 tablespoons melted butter

Preheat oven to 375 degrees F (190 degrees C).
Put the blueberries in a 6x10-inch baking dish and sprinke the lemon juice on the berries.
Whisk together: flour, sugar, and egg until mixture resembles coarse crumbs; spread this over blueberries.
Drizzle butter over flour mixture.
Bake about 30 minutes (till cobbler is bubbling).

Best served warm--and I'd say that a scoop of vanilla icecream is just about manditory!
