Coffee Black or Au Lait

Coffee first came to North America by way of New Orleans back in the mid-1700's. It was successfully cultivated in Martinique about 1720, and the French brought coffee with them as they began to settle new colonies along the Mississippi.

The taste for coffee and chicory was developed by the French during their civil war. Coffee was scarce during those times, and they found that chicory added body and flavor to the brew. The Acadians from Nova Scotia brought this taste and many other french customs (heritage) to Louisiana. Chicory is the root of the endive plant. Endive is a type of lettuce. The root of the plant is roasted and ground. It is added to the coffee to soften the bitter edge of the dark roasted coffee. It adds an almost chocolate flavor to the Cafe Au Lait served at Cafe Du Monde.

The Cafe Du Monde Coffee and Chicory is traditionally served Au Lait, mixed half and half with hot milk. However, people have a personal preference on how they like their coffee. People like their coffee strong and black, or with sugar; maybe with a little more milk, or maybe a little weaker brew. I suggest that the Coffee and Chicory be demonstrated using vacuum bottles to keep the coffee hot, and to give the customer the opportunity to experiment finding their personal preference.

Our Coffee is also available Decaffeinated. We use an Ethyl Acetate process to decaffeinate the coffee used in our blend of Coffee and Chicory. Ethyl Acetate is a natural chemical found in many fruits.
 
I have never heard of this brand before. I have been down to New Orleans once, and not for coffee. Thank you for telling the history of this brand. I might try it one day.
 
I haven't been back to NO since 1979 but growing up on the Mississippi Gulf Coast, New Orleans was a regular haunt for my friends and I and our fake ID's (every now and then someone would actually ask to see them) . We'd sleep in our cars and hit the Cafe Du Monde for beignets and coffee. I don't think I could pull that off now but at least I don't need a fake ID anymore.
 
There is a history of poor Mississippi farmers simply substituting chickory for coffee entirely. I've tried it. It's drinkable if you can't get real coffee.
My grandparents (on both sides) drank chicory almost exclusively - but they were part of the Depression generation and thought coffee was for swells and such.
 
We can actually purchase the Cafe Du Monde brand in our local grocery store. We love it! It always takes us back to New Orleans. Coffee with chicory is often served in NC barbeque restaurants. The two taste heavenly together. :hungry:
Du Monde is available in my village supermarket as well here on Long Island. Folks can likely find it at some local store.

You must've been really young. Louisiana had a 18 yr old legal drinking age until the mid 80's. If you could reach over a counter you could buy booze.

I actually think Community Coffee made in Baton Rouge for 100 years by the Saurage family is better. They advertise nationally now and have more options with chicory to suit your taste.
