Before the War I was an Attorney and Judge in my home state. During the first two years of the war I served as a Colonel. I became the head official of my home state the last years of the war. I wanted to put the war behind me and Confederates and so I felt most Confederates should be pardoned. I was not a supporter of the Freedmen's Bureau. I helped establish and Agriculture and Mechanics College in my home state. After serving as the head official I became an Attorney.

What is my name?
What position did I hold?
Which college did I help with founding?

1) I guess you are Thomas E. Bramlette
2) Not sure what is meant by "position" as you held various positions. Probably the most significant was 23rd Governor of Kentucky
3) You helped founding the Kentucky Agricultural and Mechanical College, now the University of Kentucky

Source (Wikipedia) :
"After the war, Bramlette issued a general pardon for most ex-Confederates in the state. He opposed ratification of the Fourteenth and Fifteenth Amendments and the establishment of the Freedmen's Bureau in Kentucky. Among his accomplishments not related to the war and its aftermath were the reduction of the state's debt and the establishment of the Kentucky Agricultural and Mechanical College (now the University of Kentucky). Following his term as governor, Bramlette returned to his legal practice in Louisville.
[...]
Bramlette resigned his judgeship and accepted a commission as a colonel in the Union Army on August 7, 1861"
[...]
Although Bramlette assumed the governorship as a staunch supporter of the Union cause, within a year he issued a proclamation that he would "bloodily baptize the state into the Confederacy".

You Are: Thomas Elliott Bramlette (1817–1875)
Your Position: I assume when you "became the head official of my home state the last years of the war" - Governor of Kentucky (September 1, 1863 – September 3, 1867)
The College: Kentucky Agricultural and Mechanical College (now known as the University of Kentucky

Edit - The Texas Agricultural and Mechanical College eventually became Texas A&M, most definitely not the University of Texas. The Aggie fans on the board would never forgive me if I let that pass.

Best guess here would be Lafayette Gregg who was an attorney/judge before the war, served as a colonel in the Union Army and later was elected to the Arkansas House of Reps prior to becoming an associate justice on the Arkansas Supreme Court following the war. He played a key role in founding the The University of Arkansas in Fayetteville which was originally known as Arkansas Industrial University.
