This regiment was formed in August 1861, the recruits being from their state's northern counties. As part of the ANV, we fought in various well-known battles. To name just a few: Seven Pines, where our division commander publically complimented us for conspicuous gallantry; South Mountain, where we held a very important position and inflicted heavy loss upon the enemy, thus keeping back the Yankees for several hours; Sharpsburg, where our colonel was killed and our lieutenant colonel first wounded and then captured, resulting in our major, despite his wound from South Mountain, taking command. We hardly saw any action at Fredericksburg, but we took part in Jackson's famous flank march – although we only got as far as the Wellford farm where almost 200 of our men were captured. In the winter of 1863/1864 our colonel was court-martialed for his action at Chancellorsville while we were for a while stationed in South Carolina before meeting the Yankees at Ocean Pond and keeping them from taking Florida. Our regiment took part in the defense of Petersburg before eventually being disbanded at Goldsboro, NC, on April 26, 1865.

What regiment did we serve in?

I guess that would be the 23rd Georgia Infantry, although many sources say the regiment were organised in September (not August) 1861 and that more than 250 men, not "almost 200" as required in the Question were captured at Wellford Farm

But some details from this here fitted and so I think there is at least a 50:50 chance that I might be right:

"Colonel Best was dismissed by court-martial due to his actions at Chancellorsville."

I believe the 23rd Georgia is the desired answer. Found sources that differ on whether it was formed in August or September, but all other clues match. Colonel Best was court-martialed for perceived cowardice at Chancellorsville and dismissed from the service, though his sentence was later overturned.
