Joseph R. Davis (1825-1896), nephew of Jefferson Davis, a Mississippi State Senator who resigned that office to enter the rebel service as a Captain of the Madison County Militia and rose to Brigadier General.

Bonus: Thought I might be able to slog this one out by going through a list of senators who resigned in 1860 or 1861, but the list I found shows 15 Southern senators who resigned, none of whom seems to fit the clues.

Edit - I assumed the question was referring to U. S. senators. Bad assumption.
