Camp Food Lamb With Macaroni And Cheese

1lb ground lamb
1 small onion, chopped
salt and pepper to taste
one tomato chopped
1 box mac n cheese (I used the store brand that doesn't need milk).
grated cheddar
one bag frozen broccoli

This is one that you could make in camp using a dutch oven, and a skillet..Fry up lamb and onion, salt and pepper to taste..go easy..add chopped tomato..heat until the liquid starts to bubble. Add frozen broccoli..cover for 10 min. Meanwhile cook mac n cheese according to directions. When finished add to the dutch oven, then add all the ingredients from skillet. Top with cheese..put on the fire long enought to heat through and melt the cheese on top. We had no left overs. And you could easily make this a dinner to feed many..You sure could sub the mac n cheese with tomato sauce n noodles. Just a different flavor profile, and you'd need some italian herbs to make it work, but it would be do-able..lamb is very period.
 
Looks great and I will probably try it sometime soon. However, I would suggest that lamb was not commonly prepared during the war even in western states where sheep were more commonly raised. As an added note, the meat would have probably been called mutton. These days the distinction between lamb and mutton is akin to the distinction between beef and veal.
