Zucchini

Zucchini Oatmeal Cookies

3/4 cup butter
3/4 cup brown sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups oats
1 1/2 cup whole wheat flour
3/4 cup grated zucchini
1/2 cup raisins

Cream together butter, brown sugar, egg and vanilla. Mix together baking soda, salt, cinnamon, oats, and whole wheat flour; stir into creamed mixture. Stir in zucchini and raisins until well combined. Drop by tablespoonfuls onto lightly greased cookie sheet. Bake at 350 degrees for 10 minutes or until lightly browned and set. Cool on a wire rack. Makes about 3 dozen cookies.

My zucchini haven't gotten big enough to pick yet (maybe in a week or so), so I've been buying them from the farmers' market. Yesterday, I paid $1 for five good-looking zucchini. Haven't figured out what I'll make with them yet, but that won't be a problem for long, thanks to this thread!:smile:
 
Zucchini was mentioned in another thread, so thought bring this thread back up.

My Mom's recipe for Fried Zucchini:

Wash zucchini. Cut into very thin slices. Dip in milk and then dip lightly in flour. Fry in hot deep fat, until golden brown. Drain on brown paper. Sprinkle with salt, black pepper and paprika mixed in a shaker. Serve hot.

This recipe is so easy and the fried zucchini is so delicious.
 
Found this recipe for Zucchini Muffins from old church cookbook.

2 1/2 cups all purpose flour
1 1/2 cups sugar
1 cup chopped pecans
2 cups quick cooking oats, uncooked
1 tablespoon baking powder
1 teaspoon salt
4 eggs
1 teaspoon ground cinnamon
1 medium zucchini, finely shredded
3/4 cup salad oil

Grease muffin pans. Preheat oven to 350 degrees. In a large bowl, measure first 5 ingredients. In medium bowl, with fork, beat eggs slightly. Stir egg mixture all at once into flour mixture just until flour is moistened. Spoon batter into muffin cups. Bake 25 minutes.

Great for breakfast or served with your favorite tea for an Afternoon Tea Party.
 
Another Zucchini Bread Recipe.

3 eggs
2 cups sugar
1 cup cooking pil
2 teaspoons vanilla
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
3 cups flour
1 teaspoon salt
3 cups grated unpeeled zucchini
1 1/2 cups walnuts
1 cup raisins
1 1/2 cup coconut

Preheat oven to 350 degrees. Grease and flour three loaf pans.

Beat sugar and eggs together until creamy. Add oil and vanilla. Add zucchini and stir. Add raisins, coconut and walnuts.

Bake for 0ne hour until tops are golden brown.

Enjoy with family and friends.
 
I am not the biggest fan of zucchini but my wife loves it.the best way I like it is when we go out for sushi in one of the bento boxes we get they have tempura zucchini that is to die for.this is one way to really enjoy this veggie that I don't care for.

Ingredients
  • 1 cup butter, softened
  • 2-1/2 cups sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1/2 cup baking cocoa
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup buttermilk
  • 3 cups shredded zucchini
  • 3-1/2 cups prepared chocolate frosting
