"Voices From the Kitchen, Volume II" continues to provide recipes ranging from Breakfasts, Beef, Pork, Chicken and Fish, Drinks, Sauces, Soups and Breads, as well as a variety of Holiday recipes.

Among the 504 recipes, this volume includes 32 recipes for Wild Game, 21 recipes for Jams, Jellies and Marmalades, 23 recipes and remedies to “cure” the sick and a variety of recipes for foods eaten by the soldiers, including a documented recipe for “Sloosh” or “Cush”! A description of entertaining at Tea Parties and evening guests is provided, as well as methods of making your own Beer and Mead (Hydromel).

All recipes come from a variety of period cookbooks ranging in date from 1807 to 1864. As a result, the authenticity of these recipes is unquestionably “Period Correct”. To assist those cooking from this book, there is a “Measurements and Definitions” section which provides temperature conversions, descriptions of spices and equipment, etc.

"Voices From the Kitchen Volume II" is meant to be used by interested cooks (novice and experienced), reenactors, hunters and people simply desiring to cook something “new”.

Every chapter is complimented with the “voices” of soldiers and civilians describing particular foods and meals. Taken from diary entries and letters from the Civil War, “life” is given to each dish through the words of our ancestors as they marched, camped, fought and suffered the privations of a war that defined this Nation.
