Obviously it has become quite impossible to feed anyone on twenty-five cents, but many of her principles on how to cook economically have not changed very much. We can still enjoy the recipes Ms. Corson compiled and learn from her introductory notes.
Juliet Corson was born in 1841. She became a cookery teacher, a writer and the founder of the New York Cooking School in 1876. She wrote many articles and several cookery books, including "Cooking Manual" (1877) and "Miss Corson's Practical American Cookery" (1886).
