Theodore Roosevelt's Pan-Fried Christmas Potatoes

Even though this recipes post Civil War, thought it worth posting. Theodore Roosevelt loved celebrating Christmas. Even when he spent some years living the life of a cowboy in the West, he wanted to eat something special for Christmas. He made these potatoes for his prairie companions one Christmas.

Recipe for Pan-Fried Christmas Potatoes

2 1/2 cups vegetable oil
1 teaspoon fresh rosemary
2 cups, fresh thyme
1/2 teaspoon cayenne pepper
8 to 10 Yukon Gold potatoes, unpeeled and chopped
1 onion, chopped
1 tomato, chopped
4 green onions, chopped
2 cloves garlic, chopped
1 tablespoon butter
salt and freshly ground pepper

Combine the oil, rosemary, thyme, cayenne, and potato chunks in a medium saucepan over medium heat and cook 10 minutes, until the oil is hot and the potatoes have begun to soften.

Add the onion, tomato, green onions, garlic, and butter and stir until thoroughly mixed. Cook for 10 more minutes. Remove the pan from the heat and add salt and pepper to taste. Drain off any excess oil and serve the potatoes piping hot.

Of course, Roosevelt cooked them over a campfire. Enjoy them as he and his friends did that Christmas long ago.
 
My mouth is watering profusely! I don't have a fireplace, though, so it's either I build a fire in the backyard, or. . . use the stove. :smile:
