It works for chicken too. I wonder if soldiers in the field brined poultry? Sounds logical. And it wouldn't surprise me if they secured bacon or salt pork to the bird to help brown the skin and baste.Did you watch Alton brown? I’ve been a briner for years! Best turkey ever!
