Special Relish for the Holidays: Cranberry Orange Relish

Cranberry Orange Relish

1 bag fresh cranberries
2 oranges
3/4 cup orange blossom honey

Run cranberries and oranges through a food chopper using a medium blade or chop in blender until small pieces are formed.

In a medium saucepan, bring mixture to simmer and stir in honey. Simmer, uncovered, 15 to 20 minutes. Chill at least 2 hours.

Makes about 3 cups relish.

I am not sure how period this is, but I use 5 ingredients in mine and the only thing I cut is the pears.

12 ounces cranberries cleaned and sorted
1 Cup Orange Juice (No sugar added the real stuff)
1 Cup Brown Sugar
1 to 2 pears diced
Pie Spice (I use Penzeys) to taste if you like
In a medium sauce pan heat the orange juice on medium and dissolve the sugar in it. Drop in the cranberries and pears. After about 1o minutes the cranberries split and break down on their own no chopping needed. Let cool and transfer to a serving bowl or jar to give to family.
 
Donna. My grandmother would make this as a side dish for both Thanksgiving and Christmas dinner. It is quite good and very refreshing. David.
